For my first post, I'm offering a healthy recipe for staying warm in this cold weather in New York City.
Yummy Banana Oat Bars
Serves: 8
Preparation Time: 10 minutes
Ingredients:
- 2 cups quick-cooking rolled oats (not instant)
- 1/2 cup shredded coconut
- 1/2 cup raisins or chopped dates
- 1/4 cup chopped walnuts
- 2 large ripe bananas, mashed
- 1/4 cup unsweetened applesauce (optional; see note)
- 1 tablespoon date sugar (optional; see note)
Instructions:
Preheat oven to 350 degrees. Mix all the ingredients in a large bowl until well combined. Press into a 9-by-9-inch baking pan and bake for 30 minutes. Cool on a wire rack. When cool, cut into squares or bars.
